It has been a crazy day with my Father-in-Law visiting from Romania plus getting the new kitchen all put it place and start arranging the cupboards, so there is literally almost no time for cooking. Had to come up with a quick and nutritious meal that is easy to make yet super delicious.
Introducing 🥁 : super healthy pea soup with potatoes and cream. Great for long cold days when you just need an energy boost. It is super easy to make and includes only 5 main ingredients, water include 😝.
For best results, you should use fresh peas, but, as it is not an all season veggie, frozen ones will be just good. You will need around 400g for 8 serve. From the picture below I ended up using only 4 potatoes; they very small though so If yours are medium sized, used about 3 of them. Add a hand full of fresh green spinach and an onion. I prefer shallots in almost every cream soup I make, but feel free to use which kind you have. Cut all the ingredients into cubes and place all them in a pot, than cover with water about 1 cm above the veggies.
I always add the seasoning once the soup is almost finished, so after cooking for around 20 minutes, until the veggies are soft, and giving it a good blend, the soup was ready to get tasty. Add 1 teasp. of each salt, pepper, oregano, 1 tbsp. of butter and 50 ml of cream. Give it a good mix, adjust the seasoning if needed and serve with French Baguette or croutons.
And voila, your super delicious and packed with energy lunch is ready to be enjoyed.💕
💫 Tip 1 : Before blending the veggies, take some of the peas and put aside, for decoration. They will also add some texture to your soup and will look darn pretty.
💫 Tip 2: If your soup is too thick, add water whilst stirring, little at time and check the consistency before adding the next bit

Serves : 8 🍵
- 400 g of peas, frozen of fresh
- 4 small potatoes
- 1 medium onion
- A hand full of fresh spinach
- 50 ml of cream
- 1 teasp. of each salt, pepper, oregano
- 1 tbsp. of butter
- Cut all veggies in cubes and lay in a pot. Cover with water
- Let cook for about 20 minutes or until veggies soft
- Blend all ingredients together
- Add cream, seasoning and butter and mix well
- Serve with croutons
