Raw vegan Energy bites

Finally, my kitchen is functional and I can breath again. Not everything is at it’s place jet, but with 1 extra day of work it should come out beautifully 😍

Now, I have promised my friends on instagram to share the recipes of these delicious and super nutritious energy bites so below you can find the ingredients and instructions list, for some of the recipes I have tried up until now.

First, let’s start with the base of the recipe; I use dried fruits for most of my energy balls as they give the stickiness and natural sweetness of these bombs. This product is found in almost any store and is quite affordable so it is a budget friendly snack. Date, apricots, plums, rosins and so much more options to choose from 🤩

Choose your nuts as the second main ingredient for these goodies. As long as they are raw and unsalted, you can go for almonds, cashews, bought pre-mix, whatever you find. Make sure though you have nuts combined with 3/4 dried fruits ratio for best results. This will ensure your healthy snack will have enough natural fattiness and builds energy for your body

Continue with adding the oat or coconut flakes, or even flex seeds; not only will it give texture to your raw dough, but it will also fill you longer.

Oh, and don’t forget the flavor of the mix. Using essence might be a quick way to add flavor, but do not forget that you can also for rasp the peel of orange or lime for a more natural taste. Be mindful of the quantity though, less is sometimes more in this case.

💫 Tip 1: if wanted a bit sweeter, use maple syrup, coconut oil or honey instead of processed sugar.

💫Tip 2: if the dough is too stiff, add a splash of water

💫 Tip 3 : always rest in the fridge for at least 30 minutes before serving.

1. Dates bits with coconut and lemon

⏳ : 7 minutes

Serves :10-12 💣

Ingredients

  • 120 g of dates, pit removed
  • 150 g of raw mix nuts
  • 50 g of coconut flakes
  • zest 1 lemon
  • 1 teasp. lemon juice

Instructions

    Put all the ingredients in a blender and mix for 3-4 minutes.
    Roll the dough into 10-12 bite-sized balls
    Chill for 30 minutes to 1 hour and serve

💫optional, toss through cacao powder

Ready to be enjoyed💕

2. Dates bits with coconut and quinoa puffs

⏳ : 7 minutes

Serves :10-12 💣

Ingredients

  • 120 g of dates, pit removed
  • 150 g of raw mix nuts
  • 50 g of coconut flakes
  • 10 g of puffed quinoa

Instructions

    Put all the ingredients but the quinoa puffs in a blender
    Blend for 3-4 minutes
    Add the puffed quinoa and combine well.
    Roll the dough into 10-12 bite-sized balls
    Chill for 30 minutes to 1 hour and serve

3. Apricots bits with flex seeds and orange 🍊

⏳ : 7 minutes

Serves :10-12 💣

Ingredients

  • 120 g of apricots, pit removed
  • 150 g of raw mix nuts
  • 50 g of flex seeds
  • 1/2 half of orange zest
  • 1 tbsp. of orange juice
  • 10 g of gojis

Instructions

    Put all the ingredients in a blende and mix for 3-4 minutes.
    Roll the dough into 10-12 bite-sized balls
    Chill for 30 minutes to 1 hour and serve
