Lunchtime

Ever craved for an easy and delicious lunch just like the one you have at a good restaurant, only homemade? Well, here’s the solution! Delicious steak with a super fresh grilled paprika, avocado and rucola salad, sautéed leeks and spinach in a light white sauce and steak cooked to perfection 👌 just what I needed after 4 hours of Christmas shopping 🛍

Let’s make this dish together.

First, grill 2 red pointy paprikas using a grilling pan and set aside to cool. Sautee 2 medium red onions in a tbsp. of butter, than add about 3 medium leeks, chopped. Cook for about 4 minutes while stirring from time to time, than add the spinach and continue cooking with lid on.

Now to the star of our dish. Take a quality piece of steak, I tried here the, in Belgium, popular horse meat. It is tasty, but I have to say I don’t feel very comfortable with the thought of it. Season the meat on both sides generously with salt and pepper. Heat up the grilling pan, add 1 tbsp. of butter and place the steak. Its should start to sizzle immediately. Cook on each side for 3 minutes and 2 minutes in preheated oven, followed by 5 minutes of resting time.

Pour the cooking cream to the leeks, followed by salt, pepper and nutmeg. Let shimmer for 4 minutes on low fire.

Take the beautifully grilled paprikas, cut in strips, 1 avocado, cut in cubes and a handful of baby rucola, 1 tbsp of herbs oil,pepper and fresh dill or parsley leafs give it a good mix to combine well.

And voila, your lunch is prepared in 25 minutes😍 Arrange everything nicely on a plate and share with your loved ones .

Now, back to wrapping the gifts and meal-prep for next week. Last super busy Sunday of the year so it has to be the best 😍
