Herby crunchy salmon with fresh salad

We always have fish first day of the year and , even though my family is 2000 km away, that doesn’t mean we shouldn’t keep the tradition alive right ?!

So for the 1th day of 2019 I made us a delicious salmon with crunchy breadcrumbs, paired with fresh salad, colorful tomatoes and avocado 🤤 A super fast and soo tastylicious dinner!

Not only is it super healthy, but also sooo easy to make and ready to serve in only 20 minutes – this recipe will for sure set the right tone for a great year 🎉

So, let’s do this!

The ingredients are listed below ⤵️ but, I will share some tips and tricks, just in case you want details on this recipe.

Take the fish out of the fridge 5 minutes before cooking and use a paper towel to dry before coating with the breadcrumbs mixture. This will make the breadcrumbs stick better together 💪 and give the crunchy texture. Also, make sure to use a non-sticking pan that is heated up, so that the salmon cooks evenly and gets a delicious golden color. Cook on each side for 3-4 minutes and let it rest for 2 more minutes.

While the salmon cooks, cut the avocados and tomatoes in cubes, place in a bowl together with finely chopped parsley, salt, pepper, olive oil and 1/2 of squeezed lemon, add some baby salad leafs and give it a good mix, then place in the middle of the serving plate. Lay the salmon on top and decorate with fresh lemons .

Voila – a light and delicious dinner, homemade. May the new year bring all of you joy, health and love 💕
