Herby crunchy salmon with fresh salad

We always have fish first day of the year and , even though my family is 2000 km away, that doesn’t mean we shouldn’t keep the tradition alive right ?!

So for the 1th day of 2019 I made us a delicious salmon with crunchy breadcrumbs, paired with fresh salad, colorful tomatoes and avocado 🤤 A super fast and soo tastylicious dinner!

Not only is it super healthy, but also sooo easy to make and ready to serve in only 20 minutes – this recipe will for sure set the right tone for a great year 🎉

So, let’s do this!

The ingredients are listed below ⤵️ but, I will share some tips and tricks, just in case you want details on this recipe.

Take the fish out of the fridge 5 minutes before cooking and use a paper towel to dry before coating with the breadcrumbs mixture. This will make the breadcrumbs stick better together 💪 and give the crunchy texture.Also, make sure to use a non-sticking pan that is heated up, so that the salmon cooks evenly and gets a delicious golden color. Cook on each side for 3-4 minutes and let it rest for 2 more minutes.

While the salmon cooks, cut the avocados and tomatoes in cubes, place in a bowl together with finely chopped parsley, salt, pepper, olive oil and 1/2 of squeezed lemon, add some baby salad leafs and give it a good mix, then place in the middle of the serving plate. Lay the salmon on top and decorate with fresh lemons .

Ingredients

For the salmon :

    1 kg of salmon, cut in 4 pieces
    180 g of breadcrumbs
    30 ml of oil
    handful of parsley leafs, chopped
    1 tblsp. of oregano
    1/2 tblsp. of salt
    1/2 tblsp. of pepper
    1/4 tblsp. of nutmeg

For the salad :

    2 medium avocados
    200 g of colorful tomatoes
    200 g of salad leafs
    parsley leafs, chopped
    3 tblsp. of olive oil
    1/2 tblsp. of salt
    1/2 tblsp. of pepper
    1/2 medium lemon, squeezed
  • Instructions:
    1. Dry the salmon with a paper towel
      Mix all the ingredients together, mentioned for the fish; the mixture should be wet and sticky.
      Place a generous amount of the mixture on the salmon, until the bottom and top are nicely covered.
      Cook the meat in a heated pan with 3 tblsp. of butter, for 3-4 minutes on each side
      Cut the avocados and tomatoes in cubes, than place in a bowl.
      Toss in fresh , finely chopped parsley, salt, pepper, olive oil and lemon juice.
      Place the salad in the middle of the plate and the salmon on top; decorate with lemon slices
      Serve and enjoy with your loved ones 💕
