Delicious cauliflower soup

Soups during cold season are exactly like smoothies in the summer: A MUST ! And who doesn’t like a hot bowl of creamy deliciousness full of vitamins,so perfect fot a fast and easy lunch ?!

Here is jet another super tasty recipe, ready in only 20 minutes, budget friendly and done effortlessly. Not to mention the healthy aspect of this ‘dish’ , which makes it an ideal lunch or dinner for all of us who want to loose weight or be more aware of our food intake.

You will need only a few ingredients and a blender to make yourself one of the best soups ever 🤤. Got this delicious cauliflowers from my colleague’s farm, Sibren, which made it taste even better – ‘ a offer one can not refuse ‘ 😍

💡TIP: if you want to make it even tastier, serve with crispy bacon or smoked salmon, that you add to the hot soup when serving. It will slightly cook the fish and give it that extra salty-smoky kick ( tip learned from the most amazing Chef Haddy Beck from Bla Bla Bla restaurant )

⏳ : 20 minutes

Serves : ~ 2,5 liters

Ingredients :

  • 1 medium cauliflower
  • 1 small white onion
  • 50 ml of cream
  • 1 teasp. of each salt, pepper, sage
  • 1 tbsp. of butter
  • ~ 2,5 l of water
  • Optional : smoked salmon or crispy bacon

Instructions :

  1. cut the veggies in cubes and lay in a pot. Cover with water
  2. Let cook for about 15 minutes or until veggies soft
  3. Blend all ingredients together
  4. Add cream, seasoning and butter and mix well, then cook for another 5 minutes
  5. Serve with smoked salmon or crispy bacon
