How to make a super easy jet tasty avocado egg breakfast

Some morning are too hectic for cooking and eating healthy can be challenging, so I am constantly looking for new jet super fast and easy recipes I can have for breakfast.

Granolas, although super delicious, can sometimes get too repetitive whilst preparing an omelet or sunny-side-up egg might take too long – so I have an easy way for getting my breakfast done while I get ready for my work: a super delicious egg in avocado, cooked in the oven.

It literally takes 5 minutes to prepare and you only need 3 ingredients : 1 big avocado, 2 eggs and 4 strips of bacon.

How do you make it ?

Step 1 : Turn on the oven to 170 degrees and take out your ingredients. Cut the avocado in 2 halves, remove the pit and some of the avocado, as shown in below picture

Step 2 : Place the bacon inside the avocado to create a ‘coat’ for the egg to be laid in

Step 3 : place the egg yolk in each avocado and fill with egg white.

Tip 💡 the egg white might be a lot, so break the egg in a small bowl to make it easier to pour in the avocado and not overflow it – we do not like morning mess 😅

Step 5 : place them in the oven for about 15 minutes and go make yourself ready for the perfect day ahead

Tip 💡 use an up-side-down muffin tray or any other baking container that keeps your avocados from tilting over

Once done, remove from the oven and serve with fresh chives and a nice piece of bread / cracker

And voila, that is all you need to do for a perfect breakfast with minimal effort and mess. That is what I call a healthy start in you day.
