Had my last day at the office this Friday and wanted to make something ultra special for my vegan colleagues.
After some research I ended up making this beautiful , no bake vegan cake, full of flavors and super tasty.
Although it might look challenging, it is actually very easy to make and does not require any baking skills – just a blender, a refrigerator and a cake pan. Perfect right?

Step 1 : make the base
Blend 500 g of nuts, 150 g of dates and 50 grams of dried apricots.
I choose a mix of different nuts and removed the pit to all dates, ( apricots were already un-pitted ) than blended everything for about 5 minutes. Don’t over-blend it , you still want some crunchiness to your cake.
Transfer the mixture into a cake tray and tab everything firmly to create the base. You can use the bottom of a glas or your hands to press the raw dough and shape it accordingly.
Refrigerate for 1 h for everything to come beautifully together
Step 2 : make the filling
Blend together 350 g of avocado, 1 large ripe banana, 1/2 of mango and 1/2 of orange zest. It will need to be creamy, so blend for about 5-7 minutes, until everything is smooth.
Don’t add any water, you do not want a runny filling, but just a firm mixture of fruit. Add also about 1/2 a lemon juice so that your avocado keeps the nice green color once ready.
Pour the mixture on top of the cake base, tab for any air bubbles to be removed and use a spoon to nicely even the top.
Refrigerate the raw cake for at least 2-3 h or best overnight.
Step 3 : decorate your cake
Cakes are meant to be pretty, so take the time to decorate it. Hence, why not bring the spiring spirit in and use some eatable flowers to brighten even more this deliciousness?!
I choose mint leaves and flowers, roses and even orange zest to make mine even prettier.
And voila, now your easy peasy gorgeous raw cake is ready to be enjoyed.
