Perfect sweet potato gnocchi – simply the best

In a country known for potatoes, gnocchi are for sure one of the best ways to creatively use this amazing vegetable.

They are small and soft, pasta-like deliciousness that goes perfect in a salad or just by itself with a super tasty sauce.

Although it’s mostly made with white potato, substituting the classic with sweet version not only gives them a beautiful color, but it’s also healthier.

They might look challenging to make, but the pictures below will prove to you that no technical skills are required just some patience.

So, let’s make these babies 🤩

Step 1 : make the dough

Start with 1 baked, large sweet potato , smashed. You can boil it for fast cooking, however I have discovered that roasting the potato gives it more taste.

Add 100 g of flour, 1 tablespoon of dried oregano, 1 egg and 25 ml of quality oil, than mix everything well together in a soft dough.

Tip 💡: if you have any Oil and Vinegar store around you, ( definitely buy some herby oil from them. They have some insanely delicious products that will elevate your dishes in no time .

Step 2 : knead the dough for 10 minutes, adding slowly about 50-70 g of flour

In the beginning, the dough will be quite sticky, so by constantly kneading and adding small amounts of flour you will ensure the elasticity of the dough until it gets the right consistency. It should be soft by touch and should not stick to your hands anymore.

Roll the dough in a round shape and cut in 4 pieces. It should look like the picture below :

Step 3 : Make the gnocchi

Firstly, take 1/4 of the dough and strech it out into a long line, with a diameter of about 2-3 cm , as shown below

Cut the dough vertically about 2 cm wide than use a fork to give them the typical gnocchi shape

If this proofs too challenging, just ,, poke,, each gnocchi in the middle.

Tip 💡: If you have too much dough, make sure to store it in the freezer for about 1 month and use it whenever you want something delicious 😋

Step 4: boil the gnocchi

Boil 1 l of water with 1 tablespoon of salt and 1 tablespoon of oil , than throw in the gnocchi in the hot water. Once they float, they are READY and can be transferred in a bowl.

Step 5: golden the gnocchi

Use 1 tablespoon of oil + 1 tablespoon of butter, 2 leaves of sage, throw in the gnocchi and add some fresh chopped parsley leafs, than let them to nicely golden.

Once done, serve with green salad and fetta cheese or with a delicious sauce on top.

And voila, your gnocchi are ready to be enjoyed.
