Do you love Muffins? I know I do, but they are not always the healthiest to eat when you are trying to get your summer body back. Hence, I have been doing some research on healthy muffin recipes that are delicious and can be eaten without regret.
Now, there are a lot of these recipes online, some with apples or bananas, oatmeal, and even carrots, but I do use these ingredients quite a lot in other healthy meals, so I was more than ready to try something new.
Looking into my cupboard, I realized I had some avocado and coconut flour that needs to be used up, so I thought why not give it a try and see what comes out.
And guess what ?! They were PHENOMENAL. Added also some black chocolate cuz, why not, some maple syrup for the sweetness and we ended up eating them all in one day. This is, for sure, one of my favorite recipes until now and is definitely a keeper.
It is ideal if you are allergic to gluten or even on a diet as they are made with no processed sugar, no gluten products and ready in no time. Perfect right?
So, let me share with you all the steps to for this deliciousness.
In a bowl, smash 1 large avocado and add 25 g of melted dark chocolate, 50 g of melted coconut oil, 25 g of maple syrup, 1 teaspoon of vanilla essence, a pinch of salt, then mix until well combined.
Add 1 large egg or 2 small ones and incorporate in the batter.
Add 120 g of coconut flour and 1 teaspoon of baking powder
If you see the dough is too stiff, add in around 20-30 ml of milk.
Use a cupcake tray and put the dough in, then sprinkle with dark chocolate chips on top.
Place in the oven for about 20-25 minutes at 180 degrees, remove and let to cool down for about another 20 minutes.
And voila, your muffins are ready to be enjoyed. Serve with your coffee in the morning, as a snack during the day or keep up to 3 days in the fridge. Ours did not last that long though 😅
