Well, here is another delicious way to start a perfect day with a great breakfast, full of proteins and low in carbs : eggs, mushrooms and bacon toast – all ready in only 10 minutes. Easy, super delicious and affordable – perfect right?
All you need is 1 eggs, 2 medium mushrooms, 3 slices of bacon, 1 slice of bread, 1 tablespoon of oil and some dried herbs. Nothing more ! Plus, if you don’t like doing dishes, which is my case 😳, a frying pan will suffix to prepare everything in.
But let’s cut the chit-chat and get to business.
Step 1 : Take the frying pan and place the oil.
Heat up the pan, in order for the oil to warm up and fry the ingredients. If you will not let it warm up, the bread will absorb the oil and it will loose from the crunchiness – we don’t want that, do we?!.
Step 2 : Add the slice of bread and bacon
Place the slice of bread and bacon in the pan. Make sure your bread is dark , if possible with grains, as it will be healthier. For the bacon, always go for smoked version in order to get some extra flavors in. It will pair just perfect with the egg and mushrooms.
Crisp the bacon for 3-4 minutes, than remove and place on a paper towel to absorb any extra fat. Turn the bread on the other side and let it crisp evenly .
You can use a toaster as well, but I do prefer the pan as it takes longer and I can get my other ingredients done whilst it nicely goldens.
Step 3 : golden the slices of mushrooms and scramble the egg.
Golden the slices of mushrooms for 1-2 minutes, together with 1 teaspoon of dried herbs, than add the egg on top. I do not add any salt, as the smoked bacon is salty enough. Besides, you can always add some in the end, should you think it’s necessary.
Scramble the egg and bake for another 2-3 minutes than remove from the pan. At this point I add some fresh pepper for extra tastiness.
Step 4 : build the toast
Now that you have all ingredients done, let’s build this deliciousness.
Take the slice of bread, add the scrambled eggs with mushrooms and add pieces of bacon on top.
To make it even prettier and more delicious, use micro-greens, fresh leaves of parsley, oregano or even germs to upgrade the taste and make it visually even more appealing.
And voila, now you have a super delicious breakfast toast to fuel your body and get you started on a busy day.
