Healthy energy bar made with peanut butter, nuts and oat flakes

We all have these moments during the day, when we run out of energy and need something fast jet delicious to snack on.

Sure, chocolate might be one options, but what about a healthy, homemade energy bar ? Super easy to prepare, full of fiber, healthy oils and delicious peanut buttery flavor, this deliciousness can be stores for up to 5 days in the fridge, to be indulged whenever you crave something yummy.

When visiting last week Vivobox (https://www.vivobox.be/ ), I received a delicious jar of bio honey and, since they had this perfect chopped seeds and dried fruit combo on sales, thought I should make something super healthy.

Hence, I though of combining them with some extra tasty ingredients and made a super duper sweet snack to indulge on.

But let’s cut the chitchat and get to the recipe :

Step 1 : melt honey and peanut butter

Melt 1 big tablespoon of peanut butter and 1 big tablespoon of quality honey in the microwave, for 1 minute.

Step 2 mix the dry ingredients

For this recipe I used 150 g of oat flakes, 100 g of nuts and dried fruits, ( as shown in the picture above I used the ones found at Vivobox, from All.Nuts ) 1 tablespoon of flex seeds, 1 tablespoon of dried coconut, handful of puffed quinoa.

If you do not have all the dried products mentioned above, do not worry. Make sure you make a combination of grains, nuts, dried fruits and seeds, so that you have a perfect power energy bar. Oat flakes, pumpkin or sunflower seeds, mix of raw nuts, raising, chopped dried apricots or dates, all these are perfect ingredients for a recipe of success.

Step 3 : Make the raw dough

Pour the wet, hot mixture of honey and peanut butter on top of the dried ingredients, and mix everything until well combined.

Use a tray covered with baking paper to place in the dough and tab it firmly to create the bar. You can use your hands to get everything pressed in, or you can use a spoon, as shown below.

For some extra flavor, melt 50 g of chocolate to pour on top. I used white and black chocolate as I had both at hand, but if you have only black chocolate at disposal, it will suffix.

Sprinkle the chocolate on top of the dough and place it in the fridge for 2 h to set and harden

Step 4 : cut the energy bar

Once the dough has set, cut it into pieces and use baking paper to cover the pieces and make them easier to eat and take on the go.

Store it in the fridge, in a plastic container for up to 5 days, so that you can enjoy it at any time you wish.

And voila, you super healthy super yummy energy bar is ready.
